Santorini Tomato Fritters


Tomato Balls, Fried Tomatoes, Tomato Meatballs, Tomato Pancakes...

Ingredients

6-8 Tomatoes

1 Onion

1/4 bunch of Parsley

1/4 bunch of dill

10 leaves Basil

1 teaspoon Dried Mint

1 teaspoon Thyme

1 teaspoon of Salt

150 g White Cheese

150 g Parmesan Cheese

1 cup Flour

Method

Take a large bowl to mix all the ingredients. Cut the tomatoes into small cubes. Cut the onions into even and smaller cubes.

Cut the parsley, dill and basil leaves very finely.

Put them in a large mixing bowl and mix gently. Add Salt, Mint and Thyme. Grate the cheese and add it. Add the flour in 3 controlled stages, mix each time you add flour.

Mix gently using a spoon or spatula.

Use an ice cream scoop or two spoons to shape your mixture into ready-made meatballs and cook as if you were cooking meatballs/pancakes.

I use 3 different methods during the cooking phase.

Pan Frying

Stick to Crepe Baking Machine or Toaster without using oil

Oven baked, I line them up like a soldier on a baking tray lined with baking paper.

Each method results are great .A fritter without eggs in it and also without any added oil.

Try this recipe with meat dishes, for Sunday breakfasts or as a side dish at barbecue party.
