Ingredients
4 pieces Chicken Breast
180 gr. Grilled Aubergine
4 tbsp Olive Oil
400 gr. Tomato (cut into cubes or cherry tomato)
100 gr. Feta Cheese
125 gr. Purple Onion - cut into small cubes
125 gr. Celeriac Root- cut into cubes
2 cloves Garlic
1 tspn Thyme
1 cup Parsley chopped into smallest pieces
Salt and Black Pepper
Method
Season chicken pieces with salt and pepper.
In a deep pan sear chicken pieces with 2 tbsp olive oile until they are golden on each side. Then place them on a plate and set aside.
In the same deep pan saute onion, celeriac root. Add garlic and stir in tomatoe and aubergine.Add chicken pieces on vegetables sprinkle thyme, lower the heat and cook until chicken is tender approximetely for 25 minutes. To serve cute feta cheese into small pieces and sprinkle parsley.
You can use a different cheese and serve with tortilla chips.
